Chicken piccata
Chicken piccata is a flavorful Italian dish that is usually cooked with veal. I began cooking this dish because everyone loves Italy for its famous pasta, but I wanted to try a dish without pasta based. This quickly became one of my favorite dishes to cook served over lemon, butter, and herb rice.

Ingredients
skinless boneless chicken breast
3 cups seasoned flour
capers
1tbsp butter
1/2 cup chicken stock
1 whole lemon
1/2tsp italian seasoning
1/2 tsp garlic powder
1/2 tsp onion powder
2 tbsp oil
minced garlic
Instructions
wash and dry chicken breast
season chicken breast with italian seasoning, garlic, and onion powder
3 cups of all-purpose flour in a bowl and season with same seasoning
heat skillet to medium heat with 2 tbsp of oil of choice
coat chicken in seasoned flour both sides
add chicken in hot oil and sear 2-3 minutes on first side do not touch, flip and sear 3 minutes. Remove chicken and let rest.
in same skillet add in minced garlic and chopped shallots for 1minute then add 1/2 cup of lemon juice, 1/2 cup chicken stock, capers.
add chicken back into sauce and reduce heat to medium and let chicken cook for 3 minutes and remove chicken.
in pan add 2 tbsp of cold butter and continusly stir until better has melted without seperating the sauce. once sauce is smooth then it is done.
serve with rice or mashed potatoes and drizzled with sauce.
